Broccoli Cheddar Bites

Broccoli is this deliciously versatile vegetable that is super good for you but it goes bad so fast! If you’ve been taking a peek at The Science section of Kale Eats Plants, you’ll know that food waste is a big no no when it comes to sustainability and reducing your carbon footprint. So how does one eat a large quantity of broccoli when you have a sneaking suspicion its going to go bad soon? Broccoli cheddar soup…in crispy pan-fried patty format. Its ~innovative~ guys, trust me.

  • The breadcrumbs I had on hand for this recipe just happened to be garlic and herb breadcrumbs. If you do not have this variety, I would suggest adding garlic powder and the herbs of your choice to the broccoli mix before forming into patties.
  • I am not well versed enough in veganism to suggest how to make this one vegan. Mostly because I am not sure what works best to keep the patties bonded together that is not an animal product (i.e. eggs). Let me know if you find something that works!
  • I pan fried mine because I was super hungry and super hungry Kale = impatient Kale. For a healthier alternative, bake at 425 F for 15 minutes.
  • I made 6 patties with no intention of eating all of them. Cooking them all at once ensures that the patties (and the broccoli) will stay good for another week. Store in the fridge and bake/refry them when you have a hankering for broccoli cheeeeeeese.
  • Also if you are like me, add more cheese than the recipe calls for. Cheese is darn good. No judgement here.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Makes 2-4 servings (or six patties)

Ingredients:

  • 2 cups of broccoli florets, halved
  • 1/2 cup of cheddar cheese
  • 1/2 cup of breadcrumbs
  • 1/2 cup of panko breadcrumbs
  • 2 eggs
  • 2 tsp salt
  • 3 tbsp neutral oil

Directions:

  1. Halve the broccoli florets (so they are all approximately the same size). Bring a pot of water to a boil and steam the broccoli until tender enough to poke with a fork (about 10 minutes).
If you are like me and you do not have steamer, put a colander over the pot of water with a lid on it. Not perfect but it does the job.
  1. Transfer tender broccoli to a large bowl and break apart with a fork (to the consistency of your liking). Let cool for about 5 minutes. Add the cheese, eggs, salt, and breadcrumbs to the bowl and mix well.
  2. Once fully incorporated, form the broccoli mixture into hamburger-like patties. Cover both sides with the panko breadcrumbs.
  3. Add oil to a large pan and bring to medium heat. Once the oil is hot, cook the broccoli bites until they are golden and crispy (about 3 minutes each side).

  1. After removing from the pan, hit with a little more salt while it’s still hot. Serve with literally anything these are so good.

These are a great way to use up extra veg! Hope you guys give this one a try!
