Grandma’s Marinated Tomatoes

As a bonus mini-recipe this week, I decided to make my late grandma’s marinated tomatoes. This is one of those dishes that was just always at family events. Thanksgiving, Christmas, birthdays, anything. My grandma would always be there, and always with a casserole dish full of these tomatoes. My dad taught me how to make them in high school, and I swear there was a year period where I would make them once a week and just keep them in the fridge. It was my grandma’s birthday on Sunday, so I thought what better way to celebrate than to make the most delicious and simple rendition of tomatoes ever conceived?

  • These tomatoes will last for about a week and a half in the fridge, otherwise they get mealy.
  • You have to wait at least overnight to eat them so that the tomatoes have a chance to soak up all the goodness and the parsley can soften a bit.
  • At this point I eyeball all the measurements, there’s no hard and fast measuring in this one. I give you guys my best guesstimate.
  • I love and miss you Grandma!!!

Prep Time: 10 minutes

Marinade Time: at least overnight

Makes around 6 servings

Ingredients:

  • 4 tomatoes (or as many as can fit sliced in a casserole dish)
  • olive oil
  • red wine vinegar (or balsamic vinegar)
  • 1 clove of garlic
  • parsley chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Slice all your tomatoes as thick or as thin as you want them. Layer them in a glass casserole dish.
  2. In a separate bowl, combine about 2 parts olive oil to 1 part vinegar, enough for the tomatoes to all sit in but not so much that they’re swimming in it.
  3. Chop the parsley (mostly leaves not stems) and put in the bowl. Chop the garlic and add. Also add the salt and pepper. Whisk the marinade so the vinegar and oil are somewhat combined.
  4. Pour the marinade over the tomatoes. Ensure an even distribution of the parsley and garlic.
  5. Cover the dish with plastic wrap and stick in the fridge overnight.

You can serve these on toast, with eggs, on their own, they’re sooooooo good! These tomatoes mean a lot to me and I hope you guys like them as much as I do!

    And a good tip is to drain the marinade, whisk, and pour back over tomatoes once or twice the longer they last. GMa is smiling on you!
